Cornmeal pizza crust is a variation of the basic pizza dough recipe which gives the pizza dough more heft.
The resulting cornmeal pizza dough will have an earthy taste and texture and the pizza crust will hold up well under heavy toppings.
Meats and beans are common toppings for this type of pizza crust, however the best pizza crust for a cornmeal pizza is the thin crust due to the strong taste of the pizza dough.
Below is a recipe for a cornmeal pizza crust and the second recipe for a cornmeal pizza crust using a bread machine.
To give your cornmeal pizza dough a firm, hearty crust, use whole-grain cornmeal in the pizza recipe if this is available.

- 3 teaspoons dry yeast
- 1 teaspoon sugar
- 1/2 cup warm water
- 5 cups flour (more if needed)
- 2 teaspoons salt
- 2 tablespoons sugar
- 1/4 cup vegetable oil
- 1 cup cornmeal
- 1 1/2 cups warm water
Combine the yeast in 1/2 cup water with 1 teaspoon sugar and wait until foamy (about 8 minutes).
In a large mixing bowl, combine the 5 cups flour, salt, sugar, oil and cornmeal.
When the yeast is ready, add to the bowl along with 1-1/2 cups warm water; start kneading adding in more flour as needed to create a soft smooth dough.
After the kneading is finished, let the dough rest in the bowl for 8-10 minutes.
Remove the dough from the mixing bowl and shape in a ball.
Place into a well greased bowl, cover and let rise in a warm place for about 45 minutes, or until double in size.
Punch down dough and let rest for 10 minutes (do not skip this step!)
Roll out the dough into two 16-inch circles.
Place into lightly greased pizza pans.
Top as desired.
Bake in a 400 degree oven until lightly golden brown (about 15-20 minutes).
cornmeal pizza crust recipe (for bread machine):
- 1 cup warm water
- 1/4 teaspoon salt -- optional
- 2 1/2 cups all-purpose flour -- divided
- 1 cup cornmeal -- plus
- 1 tablespoon cornmeal -- divided
- 2 tablespoons sugar or honey
- 2 teaspoons active dry yeast
Measure carefully, placing all ingredients except 1 tablespoon cornmeal in bread machine pan in order specified by owner's manual. Program basic dough cycle setting; press start. Remove dough from bread machine pan; let rest 2 to 3 minutes.
Pat and gently stretch dough into 14- to 15-inch circle. Spray a 14-inch pizza pan with nonstick cooking spray; sprinkle with remaining 1 tablespoon cornmeal. Press dough into pan.
Follow topping and baking directions for individual recipes. 1 14-inch crust makes 8 servings.
